Marinated Chicken Breast INGREDIENTS
  • 1 1/2 lb. fish steaks or skinless chicken breasts (if fish, suggest swordfish, monkfish, halibut, etc.)
  • 2 tbsp. ketchup
  • 1 tbsp. fresh lemon juice or equivalent of concentrate
  • 1 clove garlic, minced
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 1 tbsp. olive oil
  • 1/4 c. orange juice
  • 1/4 c. dry vermouth
  • 1/4 c. chopped parsley
Marinated Chicken Breast Recipe INSTRUCTIONS
Place meat (fish or chicken breasts) in shallow casserole. Combine ketchup, lemon juice, garlic, oregano, salt, olive oil, orange juice, vermouth and parsley; pour over meat. Marinate several hours or overnight in refrigerator.

Preheat broiler and grease broiler pan with oil. Broil fish for 5-15 minutes or until it flakes easily. For chicken, broil 25-30 minutes or until done. Heat marinade and spoon over fish. Serves 4. The chicken breasts option is great on the grill. May want to double marinade amounts and use extra as a sauce over potatoes or rice. The marinated chicken breast recipe is ready to serve..enjoy it !

  • 1/2 c. Miracle Whip salad dressing or mayonnaise
  • 2 tbsp. Dijon mustard
  • 1-2 tbsp. soy sauce
  • 1/2 tsp. garlic powder
  • 4 chicken breast halves, boned and skinned
MARINATED CHICKEN BREAST INSTRUCTIONS
Stir together salad dressing or mayonnaise and seasonings in a small bowl. Pour over chicken and marinate for 20 minutes. Place chicken on greased grill or rack of broiler pan. INGREDIENTS
  • 1 c. sour cream
  • 1 tsp. Worcestershire sauce
  • 1 tsp. paprika
  • 1 tsp. salt
  • 2 tsp. lemon juice
  • 1/4 tsp. pepper
  • 1 sm. garlic clove, crushed
  • 6 split chicken breasts
  • Bread crumbs
  • butter

INSTRUCTIONS
Mix sour cream and next 6 ingredients. Marinate chicken breasts 4 hours or preferably overnight. Before baking, roll each piece in fine bread crumbs.
Place in baking dish; dot with plenty of butter. Bake at 350 degrees for 1 to 1 1/2 hours. The marinated chicken breast recipe is ready to serve...nice !

INGREDIENTS:
  • 4-6 skinless, boneless chicken breast halves
  • 1 lemon
  • 1/2 cup fresh bread crumbs
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon rosemary
  • 1/4 teaspoon oregano
  • 4 garlic cloves, minced
  • 1/2 cup olive oil
  • 1 egg
  • 2 tablespoons chopped parsley
  • 1/4 cup Parmesan or Romano cheese
INSTRUCTIONS
Peel the zest from the lemon (the zest is the yellow portion of the skin which does not contain any portion of white).
In a food processor, process bread, cheese, lemon zest, paprika, herbs and cheese until combined (except parsley). Empty contents to a bowl and set aside. Rinse food processor bowl.
Squeeze lemon juice into food processor bowl. Pour in olive oil and garlic; process until garlic is minced.
Pour liquid into a ziploc bag and marinate chicken breast for 45-90 minutes.
Beat one egg and add chopped parsley. (A dash of paprika can also be added for extra color, if desired).
Cut chicken breast into slices 2 inches long by 3/8" thick. Dip chicken pieces into egg mixture, then coat with bread crumb mixture.
Sauté chicken pieces in 1/4" of olive oil until browned, flipping once or twice, about 2-3 minutes. Note: Add extra flavor to olive oil by adding a few whole cloves garlic; remove from oil when they
brown.

Recipe may be doubled. Store remainder refrigerated until ready to use. Sprinkle with mozzarella, provolone or Parmesan cheese and heat briefly in toaster oven before serving topped with pasta sauce. The marinated chicken breast recipe is ready to serve...enjoy the feast !

INGREDIENTS
  • 1 1/2 cups chili sauce
  • 3/4 cup red wine vinegar
  • 1 1/2 teaspoons prepared horseradish
  • 2 cloves garlic, finely chopped
  • 1 teaspoon salt
  • 1 teaspoon liquid smoke
  • 2 teaspoons brown sugar
  • 2 teaspoons dried onion flakes
  • 4 boneless skinless chicken breasts, thawed
INSTRUCTIONS
Combine all ingredients. Pour over chicken breasts. Cover and allow to marinate in refrigerator (1-2 hours). Cook chicken breasts on grill, using excess sauce to baste during first 10 minutes of cooking.

Ingredients

* 1 to 2 tablespoons vinegar, like cider, balsamic, or red wine
* 2 to 3 teaspoons dried herbs, like thyme, oregano, rosemary, or crumbled bay leaf
* 1 to 2 tablespoons mustard, whole grain or Dijon
* 1 to 2 teaspoon garlic or onion powder, optional
* 1/4 cup extra-virgin olive oil
* Kosher salt and freshly ground black pepper
* 4 boneless, skinless chicken breast, each about 6 ounces

INSTRUCTIONS

Put the vinegar, herbs, mustard, powders if using and oil in a large re-sealable plastic bag. Close the bag and shake to combine all the ingredients. Open the bag, drop in the chicken breast in the bag.
Close and shake the bag to coat evenly. Freeze for up to 2 weeks.
Thaw in the refrigerator overnight, under cold, running water, or in the microwave at 30 percent power for 1 minute at a time.
Heat a grill or grill pan. When the grill is hot, place the chicken on the grill and cook for about 4 minutes per side, or until cooked through.
